The Sanriku coast (north-eastern Japan) has the highest yields of abalone in Japan and is famous for its rich algae such as kelp (kombu), the favorite food of the abalone.
Awabi abalone sauce is prepared by putting fresh abalone liver in soy sauce, which continues to ferment and age according to a secret brewing technique.
This abalone sauce is a luxurious umami seasoning that has retained the smells of the sea. You will notice some subtle liquorice notes.
Our perfect combination : we recommend it with sashimi, delicate vegetable stir-fries, scallop carpaccios and other shellfish or crustaceans, wonderful meat or fish carpaccios, and some hard cheeses.
