To give it its natural, subtle smoky aroma, this soy sauce is infused twice with the smoke of sakura cherry charcoal shavings.
Aromas are subtle, with notes of hay, light cocoa and coffee.
Palate is very elegant, lots of umami, balanced salinity, lots of elegance, on an astonishing and never invasive smoky finish.

Aritaya was founded in 1832 in Joshu Annaka, Gunma Prefecture. Since then, for more than 180 years, this family has continued to make soy sauce using a traditional process of natural fermentation. The taste is transmitted and will be transmitted from generation to generation.
