
Tsuyu
Tsuyu are clear japanese sauces intended to season sômen and udon, tempura, eggs. These delicate and delicately sweet sauces have as their common ingredients soy sauce, sugar, mirin and dashi broth. They are used as is or diluted with cold water (1/3 tsuyu, 2/3 water) for tasting sômen or udon or cold soba or tempura.
