SMV or Nihonshudo (Sake Meter Value) measures the density of sake relative to water, and this is the barometer for gauging the dryness or sweetness of the sake. The higher is the SMV or Nihonshudo, the drier is the sake.
It has an attack of sweet pears and airy white flowers, together with aromas of rice umami, clean sweetness and acidity, and a comfortable, long aftertaste.
It goes well with dishes using fish roe (such as caviar, dried mullet roe), simmered red snapper and bouillabaisse.
