Yakitori sauces

The grilled chicken yakitori has won a place of choice in France and Europe. The yakitori, literally "roasted birds", are chicken skewers composed of small pieces of meat from different parts of the animal, thigh, garlic, croupion, skin, cartilage, liver, heart. This dish, emblematic of Japanese cuisine, is appreciated for its barbecue cooking and the sweet-salted marinade that makes it all the flavor. The key to the success of the yakitori is the tare sauce, a marinade based on soy sauce, Mirin (rice vinegar), sweet sake and sugar, which is reduced over high heat before being applied to skewers during cooking. This friendly dish is eaten with the hands: you can eat the meat directly on the skewer or remove it with sticks. It is customary to place a small cup on the table to throw skewers once consumed. An individual serving may contain between three and six skewers.
