The brewing water comes from "Miyakawa", selected as one of the top 100 rivers in Japan.
The traditional method of brewing, known as fresh water (fresh water facilitates fermentation and brewing), is passed down as a divine technique.
Junmai Daiginjo Shiki Rich sake is characterized by its flavors evoking strawberries, the refreshing sweetness of pear and green apple, a grace and mellowness evoking the richness and sweetness of lychee, then of Japanese melon. It goes well with grilled meat, beef sukiyaki, fish dishes, lobster, shrimp, cheeses with character.
Founded in 1857, at the end of the Edo era, our brewer is located near the Ise shrine and has been dedicating sake to the shrine for over 160 years.
