This Junmai Daiginjo sake is made with “Yuminariho” sake rice, a variant of Ise-nishiki, which is said to be at the origin of Yamada-nishiki. It was recently identified at Mie University and is a unique rice suitable for brewing sake which can only be used by our brewer.

The brewing water comes from "Miyakawa", selected as one of the top 100 rivers in Japan.
The traditional method of brewing, known as fresh water (fresh water facilitates fermentation and brewing), is passed down as a divine technique.
Junmai Daiginjo Shiki Rich sake is characterized by its flavors evoking strawberries, the refreshing sweetness of pear and green apple, a grace and mellowness evoking the richness and sweetness of lychee, then of Japanese melon. It goes well with grilled meat, beef sukiyaki, fish dishes, lobster, shrimp, cheeses with character.
