    This saké was born of an unexpected accident. In the fall of 2007, our brewer is delivered by Cel24 yeast error to brew his Nigori saké. This error is observed at half-fermentation. Indeed, the aroma was very different from that characteristic of non-filtered sakes type Nigori.

    Sold at first such as a sake downgraded, it is welcomed with great success on the market.

    The name of the product has been retained and baptized iTO-Okashi or "ItoWokashi", a name that has several meanings, especially tasty, excellent and interesting.

    The yeast CEL24 seduces with its apple sharp aroma and its refreshing acidity recalling citrus fruits, but its low alcoholic fermentation and its low tolerance to alcohol require rigorous fermentation management.

    However, with appropriate management, it can produce a saké that transcends the traditional concepts of the Sake, which no other yeast could achieve.

    This iTO-Okashi saké is a powerful and sweet saké, even among the most common Tosa (Kochi) tosa sakes.
    This saké offers a fruity, floral aroma, with powerful apple notes from the yeast used. This is a sake similar to a white wine.

    It is bright and juicy in the mouth, refreshing and sweet, with refreshing and elegant malic acidity. The final is long, on notes of barley cream and sugar.
