This junmai Ginjo sake is very rare and only a few bottles are available in the world. It is said to be one of the oldest premium koshu on the market.

Brewed in 1983, this sake has been aged slowly and was bottled in November 2021

You will be surprised by a taste with a nice balance between rice flavors and acidity.

Color is flattering, a light golden yellow.

Aromas are complex, evoking mushrooms, humus, very ripe yellow fruits (mirabelle plum, plum), candied pineapple, yellow wine, muscatel, chestnut, honey, with woody and slightly earthy accents.

Sensation in mouth is surprising. We are in the presence of a semi-dry sake with a very balanced sweetness.

Taste notes evoke walnut, yellow wine, candied apricot, prune or cherry kernels, roasted rice, honey, small touches of caramel and vanilla, with a very slight pleasant bitterness.

Tasting is recommended at a temperature of 19°C 20°C or 40°C 45°C.

Our perfect pairings: this sake can be enjoyed with quality roasted poultry, grilled duck breast, a creamy morel dish, foie gras, quality meat terrines, long-aged dry-cured ham, white fish fillets (pike-perch, perch), hard cheeses (Beaufort, Comté, Emmental), chocolate, dried fruit desserts...
