Shoyu Dashi, or Japanese seasoned soy sauce, is a versatile condiment and seasoning rich in umami, perfect for soups, stews, sauces, and salad dressings.

Term “dashi” means Japanese broth, and various dashi ingredients are used in this seasoning, including kombu (dried kelp), bonito flakes, shiitake mushrooms, and more. This mild and flavorful sauce makes an ideal condiment or dressing.

Since this seasoning is essentially concentrated dashi and soy sauce, it can be used to add a more pronounced flavor to all kinds of dishes, all in convenience of a single sauce.

Japanese noodle soups such as soba, salads such as ohitashi, and stews such as Kabocha no Nimono are just a few of the cooking possibilities, but this soy sauce is also fantastic drizzled over tofu or as a dipping sauce for sashimi.

Dashi shoyu is also a great way to add dashi broth rich flavor to marinades. Try these Japanese marinated mushrooms when you have an abundance of fresh mushrooms on hand.

Our artisan uses EU HACCP-certified katsuobushi dried bonito flakes to flavor his tsuyu. No preservatives, sweeteners, artificial colors, or seasoning additives (such as amino acids) are used. Bonito dashi (soup stock) is made in-house, ensuring a robust flavor.

Addition of kombu extract to this bonito dashi creates a synergistic umami effect, making it a versatile substitute for soy sauce for everyday use. “Soy sauce dashi” is a unique bottled seasoning that perfectly balances flavors. It can be used as a regular soy sauce.
