      In a traditional, undiluted way, this gourmet saké, rich in flavors and aromas, offers a soft and silky texture. The aromas evoke the Nashi, the flower of Tiaré, the white fishing. The nose is open, expressive, very fresh.

      The mouth reveals a lot of fruit, an elegant success, a beautiful acidity and a bright crunch. The unctuous, tangy beverage, of a surprising freshness recalls at the end of the mouth the green plum and the melon of water;

      Ikioi Masamune's design represents a carp climbing a waterfall (front door to succession). The name "carp" of Ikioi Masamune evokes a product created with a new sensitivity thanks to the traditional method of fermentation of the glutinous rice in four stages, and the birth of a new carp. Exploring the new possibilities offered by this method, this Sake offers a wide variety, brewed by exploiting the characteristics of rice in Sake, yeast and glutinous rice.

      It is elaborated from 100% grown rice in the Nagano prefecture, including Mochi rice, and is a refreshing but tasty saké (flexible umami) that takes advantage of separate flavors of the rice specific to the Sake and glutinous rice. It's a Junmai-Shu that allows you to discover the umami of glutinous rice while looking for a clear taste.

      The Chai Master, produced this sake according to the Yondan-Jikomi method, called 4-step brewing.

      Maruse's unique brewing method, the "Mochigoma Yondan Jikomi" (four-step fermentation with Mochi rice), is a distinct variant of the standard "Sandan Jikomi" (three-step fermentation) standard. While the traditional bracking of the Saké involves three additions of ingredients over four days, their method adds molest steaming rice as fourth step. This ancestral Japanese technique, formerly, is now practiced only by a handful of breweries throughout the country, and exclusively by Maruse in the prefecture of Nagano. The brewery is deeply attached to this traditional process, which it uses for all its regular products, because it gives a unique, rich and always attractive flavor derived from glutant rice.

      Fun-Shibori. The sake is pressed according to the traditional method, often called Fune-Shibori. A fune press is a box with a lid that can be pressed with great force to press the contents of the box. The bags filled with moromi are stacked in the plum press to ensure that the pressure exerted on the lid presses all the bags with approximately equal force. The fune press is equipped with a tap at the bottom of the box to drain the sake. The Fune press makes it possible to extract as delicately as possible the wonderful flavors and aromas of sake.
