Gin 424 is the sole handcrafted gin in the world made from four types of sweet potato shochu (distilled alcohol) derived from koji (the first, with floral and apple notes, is made by distilling yellow sweet potato and malted white rice; the second, with buttery and mushroom notes, is made by distilling yellow sweet potato and malted black rice; the third, with notes of yoghurt and wild berries, is obtained by distilling purple sweet potato and malted white rice; the fourth, with notes of caramel and vanilla, is obtained by distilling yellow sweet potato and malted white rice and has been aged in sherry casks.) This gives it a deep sweetness not found in other spirits.
Shochu is a traditional Japanese spirit distilled from koji (malted rice) and sweet potato.
Shochu is a very local liquor and a unique spirit that is not widely available.
This vintage gin is made from sweet potato shochu, "imojochu" and juniper berries and then herbs.
In addition to juniper berries, four botanicals traditionally used in London gin have been used: coriander seed, angelica root, iris root and cardamom.
This gin has an impressive deep flavor and sweetness derived from Imojochu, while retaining the structure of a gin and providing a richer feel of the characteristics of juniper berries.
We like the floral, fresh, spicy notes.
It should be noted that only cedar trees over 80 years old are used in the making of the wooden stills at our craftsman's. No nails are used and the cedar planks are fixed with bamboo strips.
You can smell a light cedar fragrance, a strong sweetness and umami, and a mellow alcohol quality.
