At the time, founder, Sadakichi Takehisa, was making shochu and yokan (Japanese sweet bean jelly, a dessert made from azuki paste), and so on.
There was a shiitake mushroom farm in Yame, Fukuoka prefecture. This company began by exchanging shiitake mushrooms grown in logs for those produced on site in a wheeled cart.
Second and third generations continued to grow shiitake mushrooms on oak and cedar trunks.
In the early '80s, third generation opened a specialized shiitake mushroom store, Hiyoriko, as well as an udon store, Menraku.
They sell only shiitake mushrooms grown naturally on oak and cedar trunks.
This continues today with the fourth generation.
