The Hidaka-Kombu is as good to eat as to make Dashi boil.
It is sweet and easy to boil.
It is also known as Mitsuish-Kombu. Its length varies from 2 to 7 meters but it is much less wide (6 to 15 cm) than other kombu. The edges are not ruffled. Its color is dark black green.

Our perfect agreements : Boiled, its taste is excellent. It is used in many prepared dishes such as Ni-Kombu, Kombu-Maki or Dashi-Kombu.
