This small traditional press is widely used by many individuals in Japan as well as in small country restaurants.
The tofu is wrapped in edible tulle and placed in its press.
The plate is then affixed to the tofu and a weight placed on it to drain the residual whey from the tofu.
This gives a firm tofu, easy to fry or eat as it is.
You can also place your Japanese rice there after having garnished it with furikake or more … and thus make onigiri and oshizushi. Use the same way of pressing.
