A simple recipe to enhance your dishes with umami. Dashi is a fundamental broth in Japanese cuisine, providing a flavorful and umami-rich base for many dishes. The most well-known recipe consists of a dashi broth recipe made from kombu seaweed and dried bonito flakes. Only the liquid extracted from the kombu and bonito is used in cooking.
Today, dashi is also available in instant forms, including concentrated liquid, granules, or infusion sachets.
Ingredients for traditional dashi:
To prepare a traditional dashi, you will need:
- 1 liter of water
- 30g of dried bonito flakes (katsuobushi)
- There are two ways to obtain bonito flakes:
After drying, bonito fillets are sold as brownish blocks. When ready to use, they can be reduced to to fine chips with a katsuobushi grater to produce fresh flakes.
Pre-shaved flakes – Available in sachets, these small pinkish-brown shavings are ready to use.
- 1 piece of Rausu kombu seaweed
How to make homemade dashi ?
Step 1: heat the water and kombu
- Pour the water into a saucepan and add the Rausu kombu.
- Heat over low heat to slowly infuse the flavors.
- Once the temperature reaches 78°C (172°F), remove the kombu.
- Do not discard it! You can reuse it in other recipes, such as tsukudani (simmered seaweed) or soups.
Step 2: add the dried bonito flakes
- Add the Katsuobushi Nishikidôri bonito flakes to the hot water.
- Turn off the heat and let the flakes infuse until they sink to the bottom.
Step 3: strain the dashi broth
- Strain the liquid through a fine sieve or clean cloth to remove any residue.
- You now have a clear, fragrant dashi broth, ready to use!
How to Use Dashi Broth?
This delicate and flavorful broth will enhance your dishes. You can use dashi to season woks, risottos, and marinades. It also serves as an excellent base for meat or fish tartares. We also recommend using dashi for omelets, rice, and stir-fried noodles.
