Tsuyu or mentsuyu is a Japanese soup base commonly used in soba and udon noodle dishes.

It is used as a flavoring in many dishes, whether meat, tofu or vegetables. This tsuyu is the result of extensive research to enhance vegetables aroma and flavor. Vegetables aroma and umami spill out into your mouth as you enjoy your somen, sobas or udon.

Aromas reveal notes of soy sauce, cooked sugar and reduced broth, viandé, reduced vegetable broth with buttery, toasted accents.

We like the lovely sweetness, flavors balance, lightly woody notes, hints of reduced juice and shiitake, all with very dense umami.

This tsuyu will also make an excellent reduction for foie gras. Our recommendation: dilute 2-3 times and serve as a noodle soup, or undiluted as tsuyu for garnished rice bowls known as Donburi.
