      Nagayao or "Prince Nagaya" (Nagayao was a powerful character at Nara, 684 - 729; he says he was the grandson of the Emperor Tenmu) is a sake Made by reproducing the brewing method used at the time of Nara (around 700 after J.-C.).

      In 710, the capital of Japan was transferred to Nara.

      In 1988, 40,000 Mokkan (wood bands on which official messages are written) were discovered southeast of the city. According to their content, these were the ruins of the residence of the imperial family of the time, the "Prince Nagaya".

      The Mokkan detailed the life of the nobles of the Court at that time and described 6 sakes products.

      Our Brewing Artisan has taken over the method of producing one of these sakes to make it again, identically, to the one brewed 13 centuries ago and baptized it "Prince Nagaya".

      The current method of manufacturing the saké has been established around 900 or 1000 after JC and A J.-C. And has not stopped evolving since then.

      Prince Nagaya is brewed with a single brewing process, much older, instead of the three stages of the current methods process. It is very difficult to control the quality of the product.

      The rice used is a rice of consumption and not a rice in Sake.

      Usually, rice grains are polished to maximize the purity of the saké.

      The polishing rate of 90% of Prince Nagaya Is such that it is theoretically impossible to make delicious saké.

      At the time of Nara, the brewing methodology is not yet at the point, it is thought that the delicious saké could only be produced once out of 100 or with a lesser probability.

      The Prince Nagaya has a value of the Sake SMV counter of -48. It is very soft, sweet, with A strong umami flavor.

      Intense, aromatic, aromas evoke caramel, banana, papaya, mango, apricot, honey and sesame notes, tobacco, iodinated suspicions of algae, fermented aromas of Miso.

      Nakamoto Sake Brewery is located at the foot of Mount Ikoma, between Nara and Osaka. Its history dates back to the 12th year of Kyoho (1727, Edo Era).
