Udon have been in fashion since the eighties and come in different flavours - for example, edamame green soy, green tea, cherry blossom, yuzu, sesame.

These udon noodles are delicately perfumed with Nori seaweed.

The nori used is not standard nori, it is harvested on Oomagari beach in Higashi matsushima (Miyagi Prefecture) and is that eaten by the Japanese Imperial family.

Their powerful, rich and complex nori flavour gives them an exceptional taste. The extremely fine nori powder kneaded in with the dough creates this exceptional flavour. This process highlights all of the taste notes of the nori seaweed.

In terms of looks, these udon are thinner than other traditionally produced ones.

As for how to eat them, we recommend using tsuyu which is not too powerful so as to take full advantage of the delicate iodine notes of the Oomagari nori.
