The Ichiro Ueda wines, iechi domain, are strongly influenced by its working experiences with Takahiko Soga of the Takahiko domain.
As the Takahiko domain, the project focuses on the Pinot Noir (with a small amount of Pinot Gray) and the only additive at any time is a small amount of SO2.
This dry wine produced with 80% of grapes affected by noble rot, comes from the most beautiful plantations of Pinot Noir in the domain. 2021 was a year of drought with heat records, causing serious damage to fields of full-field such as potatoes and onions, as well as table grapes, vulnerable to drought.

After fermentation in stainless steel tanks, the wine is aged in old barrels for a year. When bottling, about 20 ppm sulphurous acid are added, then the wine is high in bottle for an extra year.
