Ume is the fruit of the Japanese apricot tree, usually processed in a brine of salt and vinegar.

Salt slows the aging process and naturally preserves the fruit, while vinegar balances umeboshi sour flavor. These mini ume plum granules are much sought-after by Japanese chefs and industrialists alike.
