The Dashi is a light cooking broth, pale color. It is the emblematic broth of Japanese cuisine, synonymous with Umami and tasty notes. There are several types of Dashi broths.

The most popular Dashi is composed of dried fish flakes (katsuobushi or bonus flakes) and dried varech (Kombu). There are also vegetarian or vegan dashi, including dried varech versions without fish flakes and Dashi Shiitake-based shiitake mushrooms.
