Often called the little Kyoto of the Japanese Alps, the city of Hida Takayama is a popular district filled with the charm of Japan. Our craftsman Brasseur, Hirase Shuzo, was born in 1623 for nearly 400 years, over 15 generations, had never stopped brewing quality saké. The name Kusudama means medicine. This sake is manufactured with groundwater from the Alps of Northern Japan, from Rice HIDA and extremely cold annual temperatures. To benefit from the Koshu categorization, the Sake must be refined to a minimum for 3 years causing an evolution of the pale dress with golden yellow or at amber color.
This Sake Kusudama Jumai has a sweet and robust taste with a criticy affirmed.
On the nose and on the palate, he expresses the aromas and fragrances of sweetberry pears, black pepper and almonds.
