    This junmai sake, rich and dry, is brewed according to the traditional and laborious kimoto method, preparing the starting must in wooden vats called "kioke". In addition, it uses two different types of rice, both from the region: Yamadanishiki for koji and Isehikari for main must. These careful choices give a full-bodied sake with notes of grape rum and sweet rice, with aromas of cedar, spices, honey.

    This sake brewed in Japanese cedar barrels, is distinguished by its subtle aromatic complexity. Its texture in the palate is soft, with a balanced acidity and a umami flavor brought by rice. This sake is ideal for hot tasting.
