      Kombu algae are present in many globe countries, particularly in Japan, Russia, China, Tasmanian Islands, Australia, South Africa, in the Scandinavian Peninsula and Canada.

      In Japan, most of the kombu is harvested in Hokkaido, accounting for about 90% of total production. The waters of the Arctic Glacial Ocean that derive from Siberia to Hokkaido are rich in minerals and provide an environment that produces delicious kombu.

      The equipment used in Japan, to dry the Kombu algae in the sun, meets the most demanding sanitary standards, which makes Japanese Kombu particularly popular around the world. Hokkaido Kombu algae have long been distributed throughout Japan and represent an important commercial issue.

      Kombu algae harvested in Hokkaido were, before, transported by boat, moving west along the Japan Sea coast to Osaka, from that time.

      For this reason, Kombu algae wholesalers and transformers are mainly in or around Osaka. The route that Kombu took, from Hokkaido to its destination, called the Kombu Road. It extends to China via Okinawa

      The rishiri kombu proposed here is a high quality product that follows my kombu and the Rausu Kombu. It comes from a natural culture and harvested on average after two years.

      The Rishiri-Kombu is mild, salty and harder than the Ma-Kombu. Its Dashi broth is rich, tasty and clear, with elegant aroma. It is thinner than the ma-kombu and is slightly corner-shaped near the stem.

      The leaves are dark brown and hard. It is mainly used to make Dashi boils and is particularly popular in tea ceremonies in Kyoto.

      The hard leaves prevent discoloration or deterioration when planing, making it an ideal ingredient for high-end Tororo-Kombu.

      The council of our craftsman: Put 1 liter of cold water and 15 g kombu dried in a saucepan. Soak one night. Bring to shudder over medium heat. Remove the kombu and add shiitake fungi and bonus flakes and then bring to a boil. As soon as the bonus chips fall at the bottom of the pan, remove fire and pass the broth to Chinese without squeezing the chips to avoid bitterness.
