Torrefied sesame seeds flavored with a 70g plum

The flavored roasted sesame seeds are part of the Furikake, Japanese traditional seasonings. For the making of this Furikake, our craftsman has selected the best sources of sesames. Delicately roasted, mixed with miso, they are then dried so as to restore authentic flavors.

This drying step is a jealously preserved secret. The UME is the fruit of the Japanese apricotier, generally treated in salt brine then vinegar, the salt slows the aging process and naturally preserves the fruit, while the vinegar balances the sour flavor of the umeboshi.

These sesame seeds restore very fruity and tart flavors, recalling red shiso and hibiscus.

On the palate, a very pretty acidity and a beautiful freshness dominate, on toasted accents, with a good balance between sugar and salt.
