      The 2023 vintage, which was extremely warm and not very rainy, was of the highest quality. Chief winemaker Hirayama, who has been making wine for more than 40 years, described it as "the best vintage to date" and, like the last three years, the wine was produced without using sulphites.

      Japanese citrus flavours, such as yuzu and sudachi, blend with a pronounced mineral and iodized character with a hint of bitterness.

      The lively acidity and subtle woody notes bring complexity, leading to a long and persistent finish. The mouth is light, with a refreshing phenolic texture.

      The style is dry with light shades of new oak that give it complexity.

      Suitable for any dish that combines refreshing and rich flavours, such as boiled shrimp with tartar sauce.

      Recommended operating temperature: +8-12° C

      We recommend drinking this wine in a large glass and letting it breathe. The best time to drink it is in one to five years, as it will allow you to enjoy a richer and more stable flavor. We recommend that you let it age a few years before you taste it.

      "Koku" is a series intended for those seeking a higher level of elegance and complexity. These wines are distinguished by their graceful aromas, long finals and their ability to develop a deeper aromatic profile thanks to a prolonged aging. The 2023 vintage is a great vintage, marked by a historically rare harvest of exceptional grapes. After whole-cluster pressing, 85% of the total volume is fermented for three weeks in stainless steel conical tanks, with the remaining 15% fermented in 225-litre new drums. In the middle of the fermentation, whole Koshu berries cut by hand, equivalent to 10% of the weight of the tank, are also added to stainless steel tanks. The wine is then assembled and aged on lees for eight months at low temperature.

      Label: This year's label represents an urban landscape drawn using straight lines. Our artist, Tarek Abbar, once had a studio in Noto, where he worked in an old house. Unfortunately, his house was damaged during the recent earthquake, forcing him to move. This year's label, with its urban landscape reminiscent of Noto, is perhaps its tribute to the region.
