      Our craftsman, Shirasugi Shuzo, is a Sake Brewery from the city of Kyotango, located north of Kyoto, known to use locally grown table rice instead of rice in Sake. It produces a unique saké using very soft well water that comes from an old source of more than 240 years. The use of locally grown table rice allows them to stand out and question the belief that only Saké rice can be used for the manufacture of saké. Popular belief wants the saké made with table rice is too acidic and difficult to drink. However, Satoru Shirasugi, the 11th generation of Toji, decided to accept the acidity, which he considers a unique advantage, and chose to use table rice because of his great passion for his hometown, Kyotango, in Kyoto.

      This saké, "Chimera", bears the name of a monster of Greek mythology at the head of lion, to the goat's body and the tail of snake and expresses the strength and individuality of the chimera.
      It is the only sake in the world brewed with three types of Koji (yellow, black and white) and three types of yeast. The yellow koji is used for the manufacture of the saké, while the black and white Koji are generally used for the manufacture of shochu. In addition, it is rare that a saké is made with more than two types of yeast, which makes it quite unique.
      This explains that this saké is classified as tokubetsu (means "special"), involving that the saké has been produced according to a specific and qualitative process.
      This slightly dry saké has a rich acidity and a full taste.
      It's a sparkling and bright saké. When you open the bottle, it sparkles.
      Its aroma is refreshing and fruity, with fishing, lychee, lemon, pear and a slight taste of fungus. Its texture is creamy and its sour-sweet taste breaks out, while staying well balanced.
      This saké will accompany perfectly grilled chicken, bolognese pasta, fried pork, beef grills ...
