For several years we have been looking for products of an unsuspected quality with the same philosophy: search for products directly on the production site, refusal of any chemical treatment on the plant as well as on the product and a fortiori any irradiation (hypocritically called ionisation), making sure that the people working in these plantations work in optimal conditions, demanding numerous sortings to keep only the exceptional grains or berries, refusing any long storage and routing the products without intermediaries, i.e. with a maximum traceability We are proud to be grocers and wish to give back to this profession its letters of nobility. Le Comptoir des Poivres is a grocer and we are proud of it. A team of passionate epicureans who have been tracking down peppers and spices of impeccable quality for years, in search of new and surprising sensations by travelling to India, Iran, Madagascar, Nepal and Mexico. Le Comptoir des Poivres now offers you an exceptional choice of black, white, red, long or tailed peppers, as well as spices such as coriander, cocoa, cinnamon or the superb Targh Neguine Saffron. Comptoir des Poivres presents its range of dried whole chillies from Mexico, its compositions of mixed salts, wild black Sansho from Bhutan, Curry from Madagascar, an exceptional and exclusive blend of Arcoiris peppers, Rose petals from Ispahan as well as an incredible bunch of organic green peppercorns from the Bolaven Plateau in Laos and many other novelties to be discovered all year round. The peppers and spices are packaged in attractive metal tins, protected from the light without any treatment, to preserve all their flavours. For the most demanding taste lovers.

    Berries are very rich in essential oil and must be harvested when fully ripe when they open to release their seeds.     They have the same flavours as the dehydrated peppercorns, but with less power and more delicacy. The berry is perfumed with notes of myrtle and aromatic plants.
    The laurel smell is dominant and we find green walnut nuts and a floral perfume with camphor notes, evoking fragrant geraniums. The taste is mild, the spice is not immediate but it develops in mouth accompanied by a bitter touch. It leaves a fresh and fruity taste in the palate. Clove flavor with fruity notes of currants, blueberry and cassis and hints of juniper.

    These black Mondulkiri peppercorns are generously sized, a beautiful brilliant dark brown colour and extremely aromatic. They are pleasant on the nose and the peppercorns are very appetising. The first notes are hot, milky, evoking yoghurt, as well as dry plant notes evoking hay and tobacco. Once crushed, these peppercorns release very beautiful fresh, menthol and slightly resinous notes, with a touch of eucalyptus and base notes of cocoa. This pepper has a very moderate spice.

    The first olfactory impressions are wooded, hot, with notes of liquorice, cocoa, a touch of camphor, which then develops into tobacco, saffron and dry grass, then an aroma reminiscent of over-ripe or dry fruit and dried tomato.     The berries have an average diameter of 4 millimetres and are wrinkled and dark brown just like peppercorns. The berries are very rich in essential oils and therefore extremely aromatic. They release aromas of lemon, lime and grapefruit. There are also slightly sweet, spicy and plant notes, evoking eucalyptus. To taste there is a pleasant bitterness and strong citrus flavour.
