The dominant aroma is lemon and citronella, very fresh with intense fruitiness. To taste there is no anaesthetic effect, nor is it really spicy, the flavour is citrus - lemon, mandarin, candied citron, with spicy notes of camphor and a touch of menthol. The last taste is a mild and pleasant bitterness.

This berry, native to Nepal, is improperly named "Siltimur pepper". It is not a pepper because it belongs to the lauraceae and not the piperaceae family.
Its common names, identical to other berries from the Zanthoxylum family, lead to errors and mean that this berry is often wrongly categorised as being part of the rutaceae family.

 

Our perfect combination : the citrus notes mean this spice goes well with sea food, white fish and shellfish. It would also work well with poultry and other white meats, as well as on steamed vegetables. In desserts, you could try it with red fruits, ideally with strawberries.
