      Full wild pepper Voatsiperifery red from Madagascar

      The vatsiperifery is the fruit of a liana that belongs to the botanical family of piperaceae. It grows on the great trees of the tropical forest, in the warm and wet regions of southeastern Madagascar Island where its harvest is ensured by village communities.
      We also find on the island of Reunion and Mauritius.
      It is often confused with Cubèbe. It is even called "Cubèbe of the country" in Mauritius.
      Other vernacular names are assigned to him: brown betel, wild pepper or betal.
      It is a small bay with a small caudal appendix. It comes in three colors, corresponding to ripening stages: black, white and red.
      It is a rare product because the harvest is always difficult and the lianes are sometimes inaccessible, up to twenty meters high.
      Its preparation is very delicate because its water content is very high and the berries are very fragile.
      Ten kilos of fresh berries are needed to get a kilo of dry spice.
      The fruits saw red mature and blacken by drying like their cousin "Piper Nigrum L.". This spice of the pepper family is very little known and even in Madagascar it remains little used. It is found, used fresh, in some traditional dishes and especially in macerations with different varieties of peppers.
      This wild pepper is less powerful than black or white pepper.

      A gross grinding makes it possible to develop the aromas to the maximum.
      Avoid violent cooking that make it bitter and spicy and remove the most subtle aromas.
      Use it preferably on your dish at the time of service.
      Despite their exuberant aromatic profile, these bays are very easy to use.

      You will use it to season your salads, but it also likes meats, especially pork and lamb, but also white fish. It is exceptional on the foie gras. For vegetables, it's the potato he prefers.
