Kimoto Sake

The sake Kimoto refers to two variants of the traditional method of fermentation of sake, where no lactic acid is added, contrary to the so-called fast modern method. This process requires about 15 additional days of fermentation. In the case of Yamahai, one of the variants of Kimoto, the tank foot is left to itself without intervention.
