      This sake is unique, in very limited edition, fruit of the brew of Rice old varieties.

      Kijoshu is also the result of a special brewing method in which the amount of water added during the last fermentation step is reduced and replaced by adding Sake.
      By replacing the water with saké, the mixture focuses gently, which gives the signature of the kijoshu, a succulent, sweet and velvety infusion. The well-balanced refreshing acidity flows after the rich softness makes this kijoshu unique.
      We love the generous notes of mature banana, wild mushrooms, wet wood, caramel, Dulce de Leche, buttered notes.
