Only the largest plums are used for its making, particularly fragrant, just ripe, and not green. The fragrance and sweet-acidulated flavour of the ume will amaze you.

This umeshu, with soft fishing accents, offers a nice balance between acidity and sweetness. The city of Joyo, where our artisan is established, has long been known for its plum trees and is home to the plantation of Aoya plum trees, the largest in Kyoto Prefecture. The native variety that is cultivated there, Joshuhaku, is a high quality variety, with thick and generous flesh, and full-mature peach scent.
