      Faced with the east, as soon as the sun rises, the sun shines through the 1.5 ha vineyard of the estate Mount, in a privileged environment where the grapes are grown with good ventilation and a good drainage.

      Because the temperature rarely exceeds 30 degrees during the day and drops below 20 degrees at night, this gives the vineyard an efficiency of photosynthesis and, therefore, a moderate acidity of the wine that tends to subsist and a sugar content. To increase.

      The temperature accumulated in Yoichi is similar to that of northern Burgundy and Alsace. That's why Mr. Yamanaka, our winemaker, cultivates only 5,000 feet of Pinot Gray, one of the most successful varieties in Alsace.

      It avoids as much as possible to use pesticides and especially insecticides because it respects insects as wild yeast carriers. This wine is surprising the orange color of its dress because it is pressed after a short fermentation to extract the umami flavor.

      Ideally, it is advisable to wait at least one year and preferably three years before consuming it. This wine is ideally disgusted with sea urchins, caviar, sauteed abalt, dried and salted mule eggs (Loutargue, Karasumi), oysters, dried tuna, anchovies, sashimis, the crab, lobster, lobster, fish tartars or saint-jacques, knives, cheeses with hurried pulp, parmesan, tajines, pastilla, slightly smoked fish, veal white, Poule with pot.

      In 2020, for the first time, the Botrytis developed on grapes of Pinot Gray just as it takes: 10% of the grapes (in 2018 and 2019, there was no botrytis at all). Mr Yamanaka intentionally harvested the grapes without selecting them and prepared the wine with infected bays.

      The year was wet and cold. The aromas include fig, black tea, the mold of leaves, orange bark, mushrooms, hard candies, sandalwood, orange marmalade, juicy stone fruits like apricot, Honey, spices (cinnamon, clove), fig, date, white lily ...

      The peculiarity of this wine is that, although there is no residual sugar, we feel a certain sweetness that is well balanced with the bitterness of tannins, and a pleasant and long finish. We love the average acidity with lots of spices at the end of the mouth.

      The mouth is elegant, with a strong minerality and brilliant acidity, candied core fruits like the apricot and a soft-bitter touch that adds to the complexity of the wine. Umami rich for this wine.

      THE STORY

      Mr. Nakayama originally worked for an architectural design firm in Seattle, USA. After returning to Japan in 2012, he went to Hokkaido to teach snowboarding. 80% of instructors were farmers, as winter is the slow season for agriculture in Hokkaido. Through these encounters with farmers, he became intrigued by agriculture.

      Off-season from spring to autumn for him, as an instructor, led him to work in a resort restaurant. It was then that he became sufficiently fascinated by wine to become a sommelier. He had originally intended to grow his own grapes, but had never learned about winemaking. That's why he went to Domaine Takahiko for training. After his training period from 2014 to 2016, he opened Domaine Mont himself.

      Location of the current vineyard was an abandoned plot of land for 15 years that turned into a forest, So he had to cut down the trees one by one with a chainsaw and level out the land. Today, however, vineyard is certified to JAS organic standards and the grapes are grown organically at Domaine Mont.
