These flakes have been developed from organic red shiso leaves from Wakayama Prefecture. The purple red or shiso shiso is extremely present in Japanese cuisine, including pastry. It is often called Japanese basil (Perilla frutescens). The purple version is used for its virtues of powerful dye (for umeboshi plums, some sakes, sesame seeds ...).
