These flakes are made from organic red shiso leaves from Wakayama Prefecture. Red shiso or purple shiso is extremely popular in Japanese cuisine, including pastries. It is often called Japanese basil (perilla frutescens). The purple version is used as a powerful coloring agent (for Umeboshi plums, certain sakes, sesame seeds...).

It is also used as an aromatic herb in many culinary preparations. Red Shiso is also listed as a medicinal plant and is frequently used as an anti-inflammatory, antiseptic and antispasmodic agent.

Its flavor notes are complex, both herbaceous and tangy, with hints of basil, hibiscus, acerola, red cherry and lemon balm. These refreshingly tangy flakes have been delicately enhanced with freeze-dried ume plum flesh. Use them to spice up mixed salads, season onigiri and white rice, enhance meat and fish carpaccios and tartars, and season grilled meat and fish.

These crisps also go well with vegetable or fish paillotes, boiled vegetables, ponzu sauces, chicken tempura and karaage, fresh goat's or cow's cheese...
