      This sake Offers a subtle, elegant aroma, reminiscent of pine needles.
      It is a dry saké, with a slight bitterness, juicy acidity with the UMAMI added rice, the complex and refreshing aftertaste reminiscent of the Chartreuse.
      You will like the notes of mushroom, pine sap, small peppery touches, spicy, with a slight astringency on the end.

      This saké is brewed from the Aiyama variety rice, created in 1941 on the Sake Rice Testing site of the Hyogo Prefectural Agricultural Experimentation Station.
      Its main production area is the prefecture of Hyogo, from where it is from.
      As it is a difficult variety to cultivate, it is a rare variety that is not often grown elsewhere. This rice is traded at a high price among the rice varieties in Saké and is also known as "Rice Diamond in Sake".
      With a high level of white heart expression and good water absorption, the AIYAMA is easily dissolved in the must. This feature, associated with the flavor and sweetness of rice, gives a saké to the rich and soft flavor.
