False Peppercorns

A warm nose, spiced with a dominant note reminiscent of clove oil, freshly grated nutmeg, and burnt juniper berries or Tasmania berries, a subtle touch of cinnamon with a hint of pepper, but also fresh citrus and menthol notes reminiscent of eucalyptus leaves.

It is very aromatic with a sweet, very fruity, aniseed and peppery taste, slightly spicy and bitter, with a resinous, slightly sour flavour.

Berries are very rich in essential oil and must be harvested when fully ripe when they open to release their seeds. Aromatic notes are fresh, fruity, mixture of humus, moss, scent of undergrowth, turpentine, resinous sap, citrus and more specifically very ripe mandarin or even candied mandarin, then small hints. eucalyptus, menthol, anise, or even angelica. The spiciness is subtle, brief, elegant, with a candied citrus finish.

The berries have an average diameter of 4 millimetres and are wrinkled and dark brown just like peppercorns. The berries are very rich in essential oils and therefore extremely aromatic. They release aromas of lemon, lime and grapefruit. There are also slightly sweet, spicy and plant notes, evoking eucalyptus. To taste there is a pleasant bitterness and strong citrus flavour.

These are traditional pink berries whose skins have been peeled. The interest of doing this is that you can use the corns in a pepper mill, without clogging the mechanism. On an olfactory level, aromas are increased tenfold, with strong floral and very intensely fruity notes, with a very elegant resinous side.
