Our concentrated shiitake sauce is made from the best specimens, dried prior to processing. Gently and slowly rehydrated, they are left in salt brine for 4 months or more.

They are then filtered. The remaining juice is a powerful shiitake concentrate, concentrating all of the tannins.

This concentrated Oita shiitake sauce will work a dream on risottos, pan-fried vegetables, rice or pasta, stocks, soups and other dishes.

Only a few drops are necessary to enhance a stew or a deglazed juice.
