Nouchi Seimen has been processing sômen, fine Japanese noodles, since 3 generations. Mr. Nouchi always makes the sômen in a traditional way, by hand, in the heart of the famous Shimabara, Nagasaki Prefecture.

His mother, the creator of black sesame udon and sômen, married in the Nouchi family who produced noodles in Shimabara, at the foot of Mount Unzen. In this region, with more than 350 noodle factories, she has tried to offer a new way of tasting noodles, incorporating black sesame as ingredient in the recipes. It took a lot of tests because the production of these sômen had to respect the Shimabara hand draw process.
