The shamoji is the Japanese spatula used especially to brew and serve the Japanese rice or to brew the sushi vinegar with rice.

Shamoji is often soaked in the water during use to prevent rice from sticking there. Some expensive plastic shamoji have anti-adhesive surfaces. The metal is rarely used because it is more likely to cut rice grains or damage the Hangiri wood vessel traditionally used for mixing.
