      The Gozenshu is a wine of Rice Fermented, NEC's ultra Nihon Shu, whose consumption was reserved for lords in feudal Japan. Den means tradition.

      Gozenshu den is pale yellow, very slightly cloudy appearance.
      The attack is surprising, generous, with great magnitude, a great aromatic finesse, very fruity notes of green anise, grated green apple, white fishing, lily of the valley, without any hollow, with a big balance and a great purity.
      The nose is also very white wine coming out of tank, on Lie.
      We are seduced by the acidose apple side, the viscosity (round tears), the color between the white water and the young Sancerre.
      The nose is sometimes sauvignon, between the flower and the fruit. Concentrate and harmonious.
      At the beginning, middle and end of mouth, still no hollow, length, aromatic persistence, a very nice balance, great wealth.
      No astringency, bitter and sugars very pleasant than acidity.
      The fifth taste (or umami) is very rich.
      The mouth is fleshy, powerful, fat.
      We love the hot side, the acidity very balanced, the slight bitterness very nice.
      An excellent marriage is bored with bitterness, fish, citrus fruits, root vegetables, Saint-Jacques, langoustines.
      The length in the mouth is disconcerting. A lot of elegance and finesse, pretty mineral.
      This gozenshu is very feminine.

      Or, more greedy, as follows: Take very fine slices of San Daniele ham or Pata Negra quality Bellota. Rinse the tongue and palace with Gozenshu Den, then generously soak a piece of ham in the Gozenshu. Take in the mouth immediately. The umami of ham then explodes, salt arises very pleasantly, flavors sparkle and grow up. The ham gains smoothly and salt tablecloth tongue and palace in the most delicious sensations!
      The agreement will also be remarkable with the sashimi of fat or salmon tuna, the grilled meat of Wagyu Yakiniku, the Fondue Sukiyaki.

      Rotate the bottle (head to tail) 2 or 3 times. Rice starch saccharification generates glucose, which is more dense than the rest of the liquid. The glucose is at the bottom of the bottle and this rotation helps spreading uniformly throughout the bottle.

      Date Masamune was a lover of art and good meat, gourmet and particularly fond of fermented rice wines commonly called sake. Our Lord in question, in order to secure his permanent supply of sake, then appointed six financially well- established (prosperous) families to create real sake breweries and elaborate high-end sake to supply himself and his family. To do this, the families had to buy him the best rice, very expensive. The fruit of this rice trade also enabled him to maintain his armies. The Isawa family created the Katsuyama house at their request and started making homemade sakes: the Gozenchu. Since then, three and a half centuries have passed and, from these 6 elected families, only the Isawa family, owner and operator of the brand KATSUYAMA, has survived in the high end and continues brilliantly, led by the twelfth generation in the person of Jihei Isawa. It should be noted that the Date family still exists and that its current 34th generation continues to be provided by the Isawa family! The range we offer comes in 6 nihon-shu, among which 4 Gozenshu which tasting will surprise you enormously (their consumption was reserved, in the past, exclusively to the Lords). These Gozenshu are extraordinary, surprising, confusing, and rare and can’t leave you indifferent. One thing is certain, it will be very difficult for you, having tasted these nectars of the Lords, to revel in the same way with all the other sake or nihonshu present on the market.
