The Ichiro Ueda wines, iechi domain, are strongly influenced by its working experiences with Takahiko Soga of the Takahiko domain.
As the Takahiko domain, the project focuses on the Pinot Noir (with a small amount of Pinot Gray) and the only additive at any time is a small amount of SO2. This vintage is characterized by heavy rains just before the harvest.
The berries contained a lot of water and weighed about 1.5 times more than the previous year. Because of its clear color, a single barrel has been prepared as a red wine, and all the others as rosé wine.
This wine has not been diluted. Although he is called rosé, it is produced in the same way as the red wine. This is a pinot black with about 30% of bays with noble rot.
The fermentation is natural, in stainless steel tanks for about a month, then aging in old oak barrels for a year. He surprises with his dress evoking tea.
You will appreciate the aromas of black tea and Hojicha tea, fruity notes of plum, mature strawberry, cherry, raspberry, red berries and acerola, rose plum, violet, honey, Dashi Bouillon to the dried bonus.
These aromas recall fine rain in the forest and wetland, dead leaves and mushrooms. The mouth is opulent, taste of berries, mushroom broth and umami deep aromas reminiscent of roasted tea leaves, like Hojicha, and black tea.
Freedy sweetness of fruits and noble rot is also noticeable. The refreshing acidity is round, with a slightly salty taste that extends over the middle of the mouth, as if one tasted a dashi soup broth.
A slight nuance of ume plum is also noticeable. The tannins are almost imperceptible and soft in the mouth.
