      The gelled pearls for Soussel or "Mizutamago" are a new culinary technique called spherification. Spherification was invented, in its original form by Ferran Adria, the leader of the former Spanish restaurant "El Bulli".

      The instructions for use: transfer the gelled beads into a colander and soak them in the water and rinse slightly. Measure the amount of gelled pearls Mizutamago to use and prepare the same amount of flavored liquid.

      Put the gelled beads and the flavored liquid in the same container, close and leave in the refrigerator for about 24 hours. Use pearls within 48 hours after marinating and refrigerated.

      Flavored liquid:

      1. You can not use oil or fatty substances (cream, etc.).

      2. When you season fruit, we recommend using syrup or concentrated or powerful fruit juices because you can feel that the taste is lightweight with regular juice. In the case of syrup, we advise you to soak it for 24 hours or dilute it with water. Fruit juices, vegetable juices and other types of juices containing large particles may have a weak taste or color because large particles can not penetrate.       3. When soaking in highly concentrated liquids such as syrup, dilute with 10 to 20% water. (The concentrated fruit juice or syrup penetrates more easily than the pure fruit juice).

      7. Use containers in which mizutamago can be thoroughly tempered in the flavored liquid.

      8. It is possible to keep it in a bottle in the flavored liquid and boil it to sterilize it, but the expiry date must be set under your responsibility.
