Non-split black vanilla, Pompona, origin Madagascar 20-24cm

Its immense flowers give rise to vanilla cloves which, when they are not too numerous, can reach up to 30 cm in length.

Pompona vanilla proposed here comes from Madagascar. It is very little cultivated because its pods split before reaching optimum maturity and can not know how to optimize its concentration.

The pods are easily split because they are rich in sugar and coumarin. This gives it a particular attraction near the perfumers.

Mal-refined, it will inevitably miss fragrance.

Our pickers and refiners retain their jealous know-how.

The pods are picked at optimum maturity and are elaborated in the same way as traditional bourbon vanilla, variety planifolia.

The refining is much slower, in crates of wood.

Our Pompona vanilla is very fleshy, supple, fat, oily, black, not split.

Side aromas, the Pompona vanilla that we select is a real fireworks: undergrowth, leather, apricot, dark chocolate, red fruits, English caramel (Fudge), melon galled ripe, cherry, lilac, Molasses, cherry, liquorice, light accents of brandy, tertiary and floral notes and very complex fruity.

This vanilla will give excellent results for sugary or salty infusions, so-called salted sauces, sweet and salty pastries, arranged rums, ganaches.
