      Its cultivation has become predominant for its gustatory and aromatic qualities. Koshihikari rice is a type of short-grain rice with a mild flavor and sticky texture, different from other types of rice. It is carefully processed to preserve its flavor and nutrients, making it a premium rice, more expensive than other types.

      Koshihikari's sweetness and stickiness, its brightness, fragrance and pronounced umami make it a rice of excellence. It is highly prized for making sushi, or as an edible rice for breakfast or other daily meals. Niigata origin is a guarantee of quality recognized throughout Japan.

      How to cook rice?

      Here are the recommendations of Mr. Katayama, master sushi, for perfect rice cooking.

      Cooking time: about 1 hour

      1- Cooking rice with pan

      Rinse the rice by covering it with mineral water: mix 10 times by hand with circular movement, change the water and repeat the operation 3 times. Add next the same quantity of water in grams as rice,cover and soak 30 minutes(water shall not exceed 20 °C). Wear gently boiling in 10 to 15 minutes, lower over low heat and cook 10 minutes with lid. Turn off the fire,let stand 15 minutes covered,then gently mix to aerate the rice without breaking the grains.

      2- Japanese rice cooking tips with Japanese rice cooker (marks: Zojirushi, Tiger, Panasonic)

      Rinse the rice by covering it with mineral water: mix 10 times by hand with circular movement, change the water and repeat the operation 3 times. Then add water until reference indicated in the rice cooker, then soak for 30 to 120 minutes (water must not exceed 20 °C). Then start cooking in normal mode on the cooker. After cooking, gently open and mix the rice to lick and remove moisture without breaking the grains.

      3- Japanese rice cooking tips with a non-Japanese rice cooker

      Rinse the rice by covering it with mineral water: mix 10 times by hand with circular movement, change the water and repeat the operation 3 times. Then add water to the mark indicated in the rice cooker and soak for 30 to 120 minutes (water must not exceed 20 °C). Start cooking in normal mode and then finish let stand 10 minutes steam in the cookerOff. Finally, gently open and mix the rice to lick and remove moisture without breaking the grains.
