This sauce for salads, crudités, cold meats, boiled vegetables, Poke bowls ... is made of Umajima Akamoku algae, island located southwest of Honshu, Shimane Prefecture.

On this small island where the fishing industry is flourishing, the Akamoku is landed in the early summer.

This very sticky alga contains Fucoidan (deemed to be an impressive nutritional supplement) and minerals in abundance.

Taking advantage of its non-addictive features, our craftsman Goto Shoyu has created a refreshing vinaigrette in Japanese with soy sauce. Fersonation softens the sticky aspect of the algae and makes it easier to taste.

The mouth is suave, slightly acidulous, with vegetable notes (herbaceous) and iodinated (recalls the oyster), or even tertiary (notes of undergrowth) and zipped. A lot of gluttony, from umami, freshness for this sauce that will marry perfectly with compound salads, carpaccios of meats or fish, pasta salads or cabbage, seaweed salads, shells, of crab.
