The Koji of Rice is the basis of traditional Japanese food culture called "fermentation".

Its roots go back to the Nara era (710 to 794). The Koji of rice or malted rice is cooked rice that has been seeded with Aspergillus Oryzae, a very widespread ferment in Japan.

This ferment releases enzymes that ferment rice by decomposing its carbohydrates and proteins.

This process can also be applied to other cereals like barley, as well as legumes such as soy or beans. The Koji of rice is used as a raw material for making miso and mirin.
