Senbei are traditional small biscuits made from glutinous rice, very popular in Japan. They are made from mochi dough, baked or toasted.
Most popular flavor is the soy sauce lacquered one, popularized by a teahouse in the town of Sōka during the Edo period, which spread soy sauce salted senbei throughout Japan.
Senbei are often eaten with green tea as an occasional snack or treat or as a courtesy snack offered to guests.
Version introduced here is enhanced with roasted sesame seeds.
