Indeed, this tea is cultivated in altitude (400 to 500 meters) and without shade. Moreover, temperature differences between day and night are important and the air is very pure.
This tea is not fermented, it is roasted, which gives it its brown color.

Hojicha is low in tannin and caffeine, and is often served as a mealtime drink in Japanese hospitals.
